Catching up on posts..I almost forgot Thanksgiving!!
We didn't take any special trips this year or fry a big turkey. We celebrated this year by spending the day with the kids and being thankful for what we have.
Call of Duty? At like 6:30am....Waking up with the kiddos and of course no one really wanted to snuggle except Morgan.
Then...(because I went on a health kick) we made up some pumpkin pancakes for breakfast. These pancakes were so incredible! We used a paleo recipe and topped them off with real maple syrup and chopped pecans. My kids loved these! We ended up making them all week long. The kids couldn't get enough.
For lunch we decided to go out to eat! We enjoyed a lovely lunch somewhere great...I just can't remember where :) We ate, laughed and got really goofy. I think we do goofy well (especially daddy)
Later that evening, we enjoyed a sit down dinner at home. I had been wanting to try out a chicken recipe and (since I was dieting) needed Thanksgiving to be healthy this year. Fried Turkey, sweet potatoes loaded with butter and dinner rolls + pie...not gonna happen. So, we opted for the tradition and went for a healthier Thanksgiving dinner :)
Cilantro Lime Chicken with Red Peppers
It. Was. So. Good!!!!
The rest of the evening was filled with movies and popcorn!! We rented movies out the wazoo and got lazy on the couch. We really needed lazy at this time!
I loved spending the day with the kids. It was fun, relaxing and we were definitely not starving to say the least.
Happy Thanksgiving!! {really late}
